Beef wellington, need I say more? Treat yourself, this recipe is always a crowd pleaser and may seem more intimidating than what is actually is.Everything about this dish ticks ALL the boxes, a juicy tender beef fillet, luscious savory mushroom duxelle, all wrapped in a golden crisp layer off puff pastry. I mean, drool!

1/2 Beef Fillet
1 Roll Puff Pastry
2 Eggs
1 tbsp Hot English Mustard
2 Tbsp Willow creek olive oil
6 Slices Prosciutto ham
For the the mushroom duxelle:
1 1/2 Punnets brown mushrooms
2 Cloves Garlic
3 Sprigs Thyme
3 Tbsp Butter
Seasoning
Preheat your Siemens 4D combi oven to 180°C
Sear your seasoned beef fillet in a smoking hot pan until golden brown
Allow to rest for 20 minutes
For the mushroom duxelle:
Roughly slice all your mushrooms & in a hot pan begin to fry along with your garlic, thyme and butter until no moisture is left in your pan
Season and allow to slightly cool
On chopping board begin to finely chop your mushrooms until a spreadable, duxelle texture is achieved
Set aside
Line your cling film on you flat kitchen surface to roll your beef wellington
Layer you prosciutto ham on top of you prepared clingfilm layer
Evenly spread your mushroom duxelle on top of your procsciutto ham
Brush your rested beef fillet with hot English mustard & roll your beef fillet into your prepared layers, making sure the cling film is wrapped tightly to help hold its shape
Allow to rest in the fridge for 15 minutes
Begin to roll out your puff pastry on a floured surface, roll until large enough to cover the entire beef fillet
Brush the inside of your puff pastry to help it stick to your fillet
Remove the cling film from round your beef fillet & gently roll into your puff pastry layer
Seal your pastry closed & generously brush your beef wellington with egg wash & place into the fridge to rest for 10 minutes , this helps prevent you pastry from splitting & shrinking
Remove your uncooked beef wellington from the fridge & place into you preheated Siemens 4D combi oven for 30 minutes
Once your beef wellington is cooked & golden brown remove from the oven & rest for 10 minutes before portioning
Gently slice your beef wellington into desired size using your sharp Scanpan knife
Best served with my golden roasties & slathered in a homemade gravy!
